    Hi all

    Happy pancake day - not sure the other countries have it. It is supposed to be the time to get rid of the perishable food before a 40 day fast - but mine will be one day!!

    So make sure all is done correct.

    100gm plain flower

    100ml milk

    large egg

    beat all together and add a little more milk if like a thinner batter

    then let it stand for 30 mins - very important to allow some chemical reactions to take place.

    Heat some lard in a non-stick pan - this is not meant to be a healthy meal so oil is not appropriate - the lard will give a better flavour to the pancakes Wink

    When the fat starts to smoke it is hot enough - pour or ladle the batter into the pan and swirl around to cover the pan - when it starts to smoke again it has to be tossed - or flipped if children present!! It does not taste correct if it is flipped with a spatula - it must be tossed into the air and caught again - I am good at this tossing Smile as I live on my own so can cook!

    when it starts to smoke again slide onto a warm plate

    repeat until the pile of pancakes reaches the ceiling!

    cover with your fav speads - usually fruity or sweet - so lemon and orange juice with sugar is popular

    being a diabetic I have to be careful so I prefer golden syrup spread on individual pancakes and rolled as in the pic below - I also spread with strawberry jam and roll up - when all ready to eat I use my fingers being a common boy

    I will be cooking mine in butter.  Then spreading with plenty of lemon and  brown sugar Big Smile.

    Those look lovely, but where I live we call those Swedish pancakes. Not sure where the name came from

    but these look mighty tasty indeed.  Wink

    No pancake day here in Seattle, I wish we did. I do make Swedish pancakes that are yummy like the ones in your pic.I am full Swedish ya know so I like the swedish pancakes yum yum.I like it with boysenberry jam and extra honey butter. Not so good for the waist line but yummy in the tummyStick out tongue

    Wow I make the same pancake Kari. I like them with my homemade strawberry freezer jam and also with

    raspberry too! And yes, lots of butter  tongue

    Well hell, I got some black raspberry preserves, some blackberry jam, some butter, some syrup. What else do we need? Man, I'm hungry.
